Guacamole & Salsa

Ingredients: Guacamole:
  • Avocados(3)
  • Salt
  • Lemon
  • Cilantro
  • Onion
  • Jalapeños
Salsa:
  • Tomatoes (3)
  • Jalapeños (2)
  • Salt
  • Water
Steps:​
Guacamole:
  1. Slice your avocados and mash them in a bowl with a fork
  2. Then add a pinch of salt, with a chopped handful of cilantro
  3. Once mixed, add chopped onion and a jalapeño
  4. Top it off with half a squeezed lemon, stir, and enjoy!
Salsa:
  1. Place some tomatoes on a pan and cook on medium heat until a bit burned and somewhat squishy
  2. Then place in a blender with some water and 2 jalapeños
  3. Once blended, place it in a bowl and enjoy with chips!

Cauliflower Ceviche

Ingredients: 
  • 1 head of Cauliflower
  • 3 Tomatoes
  • 1 Red Onion
  • 2 Garlic Cloves
  • 3 Jalapeño Peppers
  • 3/4 cups of Cilantro
  • 3/4 cups of freshly squeezed lime
  • 1 Avocado
  • 1 Large Cucumber
  • Tostadas
Steps:
  • Boil your cauliflower for about 7 minutes or until fully cooked
  • Once boiled, let it cool for 5 minutes  before chopping it up into small pieces
  • After chopping up your cauliflower, squeeze the excess water from it by pressing with towels
  • Pour all the lime juice into a bowl with your cauliflower and let it marinate while you cut your veggies
  • Dice up all of your veggies (tomato, cucumber, jalapeños) 
  • Mince your garlic
  • Combine your veggies and cauliflower, leaving the lime juice
  • Season to taste with salt
  • Serve on a tostada and garnish with avocado


Agua de pepino

Ingredients:
  • Cucumber
  • Chia seeds
  •  Lemon
Steps:
  • Fill pitcher with water (1 gallon of water)
  • Add ¾ cup of sugar 
  • Using 2 cucumbers, peel part of the cucumber and cut into few slices
  • Blend the slices of cucumber and 3 fresh mint leaves with water
  • Mix blended mixture into water and stir until evenly mixed
  • Squeeze 1 lemon into the water
  • Lastly, add 4 tablespoons of chia seeds

Sopa de Fideo

Ingredients: 
  • 4 Tomato
  • 1 Onion
  • 3 Garlic Cloves
  • Tomato Paste
  • One Carrot 
  • One Potato
  • 1 bag of Fideo
  • Queso Fresco
  • Crema Mexicana
Steps:
  • Fry the Fideo in a pan with a bit of oil until it is golden brown along with your veggies 
Optional: Fry tomatoes, garlic, and onion in a separate pan
  • Blend garlic, tomatoes, and onion with vegetable broth and two heaping tablespoons of tomato paste
  • Strain the blended mixture directly into the pan with the Fideo 
  • Season with onion powder, salt, and pepper to taste
Optional: Add 2-3 cups of water if you see that it is needed 
  • Cover and let simmer for 15 minutes on low heat
  • Serve the sopa and garnish with cilantro, crema, and queso fresco

Agua de Jamaica con limon

Ingredients:
  • Jamaica
  • Sugar
  • Lemons
  • Mint leaves (optional)
Steps: 
  1. Cut your lemons in half and squeeze them into a bowl/cup
  2. Add your jamaica into a pot, add water, and set to a boil for a few minutes
  3. Once boiled, set it aside to cool off
  4. With a strainer, add your jamaica juice & lemon juice to a pitcher
  5. Add a couple cups of water and some spoonfuls of sugar (taste testing until you reach your desired results)
  6. If you want, add some mint leaves for that extra fresh flavor & enjoy!

Tacos Dorados de Papa

Ingredients:
  • Tortillas
  • Potatoes 
  • Salsa & guacamole (optional but tasty!)
Steps:
  1. Peel & chop your potatoes  
  2. Cook your potatoes in a pan, mash them, and add salt and pepper
  3. Once cooked, add some of your potatoes to a tortilla and fold as desired (use a toothpick to keep them in place)
  4. Finally, fry your tacos in a pan until they're golden brown & enjoy

 Vegan Soy Chorizo Burritos with guacamole

Ingredients: 
  • Jasmine Rice (2 cups)
  • Pinto beans (1 cup)
  • Corn (1 can)
  • Lettuce (1)
  • Onion (2)
  • Avocado (2)
  • Tomato (1)
  • Cilantro 
  • Lemon (1)
  • Salt (pinch)
  • Garlic cloves
  • El mexicano tomato sauce (1)
  • Soy chorizo
  • Tortillas
Steps: 
  1. Cook soy chorizo in a pan with a bit of olive oil​
  2. Take some leaves off the lettuce and chop them up
  3. On your tortilla add some pinto beans, Spanish rice, soy chorizo, lettuce, corn, and lastly some onions, guacamole (you can find the recipe for our guacamole on our page!), and lastly some onions
  4. Then lastly wrap your burrito and enjoy!

Vegan Horchata

Ingredients:
  • Jasmine Rice 
  • Cinnamon sticks (bag… only need 1 stick)
  • Sugar
  • Vanilla
Steps
  1. Put rice and cinnamon in water for 3 or more hours
  2. Blend everything in a blender​
  3. Add desired sugar and vanilla to the water
  4. Strain the blended rice and cinnamon and add it to the water
(To make our coconut horchata, you will simply pour one and a half bottle of coconut water with one-half cup of water instead of just water, it's that easy!)


Tostilocos

Ingredients:
  • Tostitos Salsa Verde Chips 
  • 1 Jicama 
  • 1 Cucumber
  • 1 Mango 
  • Pickled white onions (replacement for cueritos)
  • Pulparindo Candy
  • Japanese Peanuts  
  • Chamoy 
  • 1 Lime
  • Valentina​​

Steps:
  1. Cut Jicama, Cucumber, Mango, and Pulparindo Candy into small bite size pieces
  2. Open Tostitos Package and assemble:
    1. ​​First add all the diced fruit along with your Pulparindo candy and Japanese peanuts
    2. Add pickled onions, Chamoy, Valentina, and a squeeze of lime juice
   
Limonada
Ingredients: 
  • 1 Cup of freshly squeezed lime juice (8-10 limes)
  • 1 cup of sugar
  • 5 cups of water
Steps:
  1. Squeeze lime juice (1 cup)
  2. Put 1 cup of sugar and water in a saucepan and stir just until sugar is fully dissolved​ (This will take about 3 minutes on low heat)
  3. In a pitcher pour the sugar mixture, lime juice, 4 more cups of water, and ice
  4. Garnish with lime slices
